Sprout (Kerkkä) is the annual growth part of spruces. They are light green coloured and at their best in June before the needles turn darker and harder.
Sprout collecting is done manually and spruces will not get damaged in professional hands. Spruces are quite happy to give their best to the collectors.
Kerkkä is an arctic superfood from the forests of Lapland, which is by far the cleanest corner in the whole Europe.
Spruce sprout holds an amazing amount of vitamin C in it. If you compare the treasures of the Finnish forest, logs and sprouts with each other, the winner is clearly sprouts. Why? Because it is available for all of us. This is actually the real green gold of Finland!
